Inventing Oriental Fries

Kitok Restaurant's iconic menu item is its beloved oriental fries—tempura-battered, shredded potatoes, carrots, onions, and parsley. The dish was inspired in part by a Korean pancake recipe Kitok Moore grew up having at her childhood home. Moore perfected her recipe for oriental fries by testing it with regular customers. This image of Moore preparing oriental fries appeared with a review of the restaurant in the Waco Tribune-Herald in 1979. The caption reads: “Her husband thought Korean food would never make in Waco.” Consistent customers proved a Korean restaurant could survive in Waco, and today, old and new customers flock to Kitok Restaurant for its unique menu items—among them teh oriental fries first developed more than forty years ago.
